Why I Love This Popcorn Recipe

I will always choose to eat popcorn. If I have nothing made for dinner, I make popcorn. If I need a snack, you guessed it! I make popcorn.

This fall snack mix is more of a once-in-a-while snack. It’s fancy popcorn that’s perfect for a movie night or to bag up as gifts for friends. Peanuts and candy corn are added to this mix for more of a fall treat, but you can easily swap in your favorite candy. Or leave the nuts out entirely to make this customized for you.

Be warned that the peanut butter and white chocolate poured over the top are addictive. Not that popcorn needs the help, but you’ll love it!

White Chocolate & Peanut Butter Popcorn

If you're looking for a delicious fall-time snack, this white chocolate, and peanut butter popcorn mix. It's a delicious combination of flavors with the seasonally-appropriate addition of candy corn, which can be included or left out. Be warned that it will be hard to stop eating!

Ingredients

  • 8 qt popped popcorn (1 cup unpopped, subsequently popped)
  • 2 cups white chocolate chips
  • cup creamy peanut butter
  • 1 ½ cups peanuts roasted and salted
  • 1 cup candy corn
  • flaky sea salt as desired

Instructions 

  • Pour the popped popcorn into a large bowl and set aside.
    8 qt popped popcorn (1 cup unpopped, subsequently popped)
  • In a medium bowl, combine the white chocolate and the peanut butter. Heat at 50% power in the microwave stirring every 30 seconds until the mixture is smooth, 2-3 minutes total.
    2 cups white chocolate chips, ⅔ cup creamy peanut butter
  • Pour the white chocolate peanut butter mixture over the popcorn. Add the peanuts and candy corn. Stir until the popcorn is coated in the mixture and pour on a large baking sheet. Sprinkle with flaky sea salt and allow the popcorn to cool for 15 minutes.
    1 ½ cups peanuts, 1 cup candy corn, flaky sea salt
  • After cooling, break into pieces and serve.

Notes

8 quarts of popped popcorn equates to roughly 1 cup of unpopped popcorn. Once popped, the kernels add up to 8 quarts.

    DO NOT use 8 qts of popcorn! I believe he meant 8 cups. I ended up using about 10 cups and it turned out perfect.

      I am glad it turned out perfect for you using 10 cups. The 8 quarts I developed the recipe for is correct. That works out to 32 cups of popped popcorn. This comes from using 1 cup of unpopped popcorn kernels. I just popped a fresh batch and measured it cup for cup and counted to make sure. It does sounds like a lot but it is one full (Stir Crazy) popper full, and the way popped popcorn is measured can be interpreted differently for each person measuring since they don’t fit in a cup measure perfectly. I do use the white chocolate/peanut butter on these 8 quarts.

    First – the taste is great. 8 quarts of popcorn seemed like too much after I had it popped so I removed about 1 quart. I upped the peanuts and candy corn slightly as it didn’t look like quite enough when mixed in. I put in on two large trays – it would not fit on one. After sitting for an hour it really does not break up as it not really adhered that much. When you pick up a piece you get about three or for popped kernels and a nut and maybe a candy corn. I think it needs more coating – or even less popcorn. Some of the kernels are not completely coated even though I mixed it well – again maybe a bit more coating. I will definitely make it again – it is very good – but I will experiment with more coating. I think upping the white chocolate might make it adhere together better. Love all your recipes and videos.

      If you watch the video – there is no way there is 8 quarts of popped corn in that bowl. I have a huge bowl that is about the same size and my bowl was almost completely full. Plus – he put it all on one tray – and 8 quarts took me two trays. I think this is why it does not stick together like expected – there is too much popcorn.

    Very yummy but we found that 8 quarts (32 cups) was way too much! Even when we cut the recipe in half, it was a huge amount of popcorn. The one thing that I was a bit disappointed about is that the popcorn didn’t stay as crunchy as I had hoped and was a bit soggy and I guess that is because of the peanut butter but we loved the flavor. I used mini M&M’s instead of the candy corn because that is what I had on hand and it worked really well.

    Because I have eaten almost the entire batch myself!
    It is crazy good. It’s creamy and sweet and salty and oh so very good!

      I had the same issue. Not sure with the peanut butter it will really get hard. See my review and comments. But it was very good.
