Ingredients

  • 4 tbsp coconut oil
  • ½ cup unpopped popcorn kernels
  • ¼ cup granulated sugar
  • ½ tsp kosher salt
  • 4 oz white chocolate melted
  • ½ tsp peppermint oil
  • ¼ cup crushed peppermint candy

Instructions

  • Prepare the popcorn. Place a stovetop popper over medium-high heat and add the oil. A high-heat oil with a high smoking point is essential so it can withstand the temperature without burning the popcorn. Add a couple of popcorn kernels. When the kernels pop, you know the oil is at the correct temperature. Add the rest of the kernels, then stir to coat the kernels with the oil and add the sugar. Stir constantly. After a few minutes, the kernels will start to pop. Keep stirring until you don’t hear any more pops. Dump the popcorn onto a baking sheet, spread it into an even layer, and sprinkle with kosher salt while the popcorn is still warm.

  • Add the peppermint candies. Crush the peppermint candy, creating both large and small pieces. Sprinkle over the popcorn while the chocolate is still warm. Let cool completely, then break apart and serve.
