The warm, roasted flavor of coffee is brought to ice cream in this recipe. Combined with flavors of vanilla and caramel, this balanced ice cream is a coffee lover's dream!

Servings 10

  • 3 tbsp boiling water
  • 2 tbsp instant coffee
  • 1 tsp vanilla extract
  • 2 ½ cups milk
  • 2 ½ cups heavy cream
  • 1 cup white granulated sugar
  • 2 large eggs

  • Dissolve the instant coffee in water and add vanilla and set aside. Whisk eggs with the sugar until light and fluffy. Add milk and cream, mixing to incorporate. Last, add coffee and vanilla mixture to the milk mixture.
  • Pre-chill the mixture for 2-4 hours. Follow the manufacturer's instructions for your ice cream freezer. Using my KitchenAid attachment, it takes approximately 20-30 minutes to achieve a nice soft-serve consistency. To achieve a better freeze, put directly into an airtight container after frozen and place in the freezer for 2-4 hours.
