Coffee Ice Cream

Ingredients
- 3 tbsp boiling water
- 2 tbsp instant coffee
- 1 tsp vanilla extract
- 2 ½ cups milk
- 2 ½ cups heavy cream
- 1 cup granulated sugar
- 2 large eggs
Instructions
- Dissolve the instant coffee in water, and add vanilla, and set aside.3 tbsp boiling water, 2 tbsp instant coffee, 1 tsp vanilla extract
- Whisk eggs with the sugar until light and fluffy. Add milk and cream, mixing to incorporate. Last, add the coffee and vanilla mixture to the milk mixture.2 ½ cups milk, 1 cup granulated sugar, 2 large eggs, 2 ½ cups heavy cream
- Pre-chill the mixture for 2-4 hours. Follow the manufacturer's instructions for your ice cream freezer. Using my KitchenAid attachment, it takes approximately 20-30 minutes to achieve a nice soft-serve consistency. To achieve a better freeze, put directly into an airtight container after frozen and place in the freezer for 2-4 hours.
