Why I Love This Raspberry Cobbler
When it comes to desserts, some take a long time to prepare and are super delicious. And some take hardly any time at all and still taste like a million bucks. This recipe for a lazy raspberry cobbler is the latter type of dessert. As the name implies, it may be one of the easiest (or laziest) desserts you’ll ever make! The magic occurs when the melted butter and batter envelop the raspberries sprinkled all over the top, reversing their layers and creating what looks like the typical cobbler recipe. When it’s scooped, the crumb topping remains a bit gooey, and the raspberries underneath become creamy and full of sweet summery goodness.
But the best part of this cobbler is probably the fact that it can be prepared any time during the year. Unlike some fruit cobblers, including my recipe for lazy peach cobbler, raspberries are pretty much always in season in the grocery store. And their sweetness doesn’t waver as much as some fruits may, meaning that this dessert is good for spring, summer, fall, and winter. You’re going to love it no matter the season!

Raspberry Cobbler Ingredients
- Raspberries are in season during the summer months. But they’re also widely available throughout much of the rest of the year without too much sacrifice in flavor, or choose frozen berries for a perfect substitution. Plus, their ability to ooze and spread is perfect for this cobbler recipe.
- Vanilla extract is a crucial part of this cobbler recipe. Since there are pretty much pantry staples as the main ingredients, vanilla extract imparts a delicious level of flavor.
- Unsalted butter is the key that will make this recipe super delicious! It’s used to create a greased layer in the baking dish, but it also adds the most scrumptious flavor to the resulting cobbler with a crisp golden crust.

How to Make Raspberry Cobbler
Step 1: Prepare the pan – Preheat the oven to 350°F. Put the butter in a 9 x 9-inch baking dish and place it in the oven to melt. While the butter is melting, prepare the rest of the ingredients. Once it has melted, remove the butter from the oven.


Step 2: Prepare the ingredients – While the butter is melting, in a large bowl, combine the flour, sugar, baking powder, salt, vanilla extract, and milk. Whisk everything together until well combined.


Step 3: Assemble the dessert – Pour the batter right into the baking dish on top of the melted butter. Then place the raspberries evenly over the top of the batter.


Step 4: Bake the recipe – Place the baking dish in the preheated 350°F oven and bake for 45-55 minutes. Once baked, remove from the oven and let cool slightly before serving.


Recipe Tips
- The baking dish does not need to be sprayed or greased for this recipe, which truly makes it even easier! When the butter is melted in the baking dish as the first step, it creates a naturally greased surface that will allow the cobbler to be scooped out easily.
- Homemade vanilla extract can add some extra depth to this dessert. It’s simple and takes minimal time to make!
- When pouring the batter into the melted butter in the baking dish, there is no need to mix the two together. As the cobbler bakes, the butter and batter will combine and envelop the raspberries that were sprinkled on top.

No, other levels of dairy milk can be used when baking this cobbler. However, the greatest amount of flavor will be derived from the use of whole milk.
Sugar can be adjusted to taste, but it will change the texture of the cobbler layer. I always suggest trying the recipe at least once as written and then adjusting in small increments.

- Pour the batter into the baking dish with the melted butter. There is no need to stir. Sprinkle the raspberries directly on top of the batter.2 cups fresh or frozen raspberries
- Bake in the preheated oven until the cobbler is golden and set in the middle, 45-55 minutes. Once baked, remove from the oven and cool 15 minutes before serving.

Delicious and very quick. I made mine with fresh blueberries. It was a little sweet for me. I would cut the sugar and use 1/2 to 3/4 cup sugar. Will definitely make it again.

This is a tasty dessert, and easily serves 4. I used frozen raspberries, and that may be why the centre was gooey, even though the sides were crispy. It is sweet enough, but not very photogenic!
