I am amazed at all of the cookies my Grandma Conrad would make. I don’t actually remember her making these, but I do remember her telling me about them. Just like the name suggests, these are baked in a waffle iron. Yes, it is time to actually use your waffle iron!
Okay, maybe you’re one of those people who use your waffle iron fairly regularly, but many of us don’t. I will say that this recipe works best on a traditional waffle iron.
Waffle cookies are an old recipe, but definitely one that is worth trying. These are great to make for Christmas with children or to give as gifts and use at cookie swaps since they are such a unique cookie! You can bet that no one else in attendance will have made these!

Chocolate Waffle Cookies Ingredients
- Butter, like in many cookies, plays the role of providing flavor and giving them their soft texture. In this cookie recipe, which is slightly different than some other cookie recipes, rather than creaming the butter with sugar, the butter is melted. This ensures a soft cookie.
- Eggs are aplenty in this cookie recipe, which is somewhat different from other cookies. And the ratio of eggs to flour is higher to make these closer to the consistency of a waffle.
- Vanilla extract is in almost every baked good, but especially those that contain chocolate. Why is that? Vanilla extract helps bring out more of those all-important chocolate notes.
- Cocoa is what makes these a chocolate cookie. For best results, use Dutch-process cocoa to ensure a richly-colored cookie full of chocolate flavor.
- Semi-sweet chocolate brings home the chocolate flavor as the frosting on top of the finished cookies. Instead of spreading chocolate on and making it pool in all the crevices, simply dip the cookies in the chocolate to give just the right amount.

Chocolate Waffle Cookies

Ingredients
- 16 tbsp (2 sticks) unsalted butter melted and slightly cooled
- 1 ½ cups granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- ½ cup Dutch-process cocoa powder
- 1 tsp kosher salt
For the chocolate topping
- 8 oz semi-sweet chocolate chips
- 1 tbsp coconut oil (or unsalted butter)
Instructions
- Preheat waffle iron.
- In a large bowl, mix together the butter, sugar, eggs, and vanilla extract.16 tbsp (2 sticks) unsalted butter, 1 ½ cups granulated sugar, 4 large eggs, 1 tsp vanilla extract
- Sift in the flour, cocoa, and salt. Mix until no dry streaks remain.2 cups all-purpose flour, ½ cup Dutch-process cocoa powder, 1 tsp kosher salt
- Grease the preheated waffle iron and spoon in heaping teaspoons of batter. Depending on the size of the waffle iron, 2-4 can be made at a time. Let bake until crispy on the edge but soft in the center, 2-5 minutes depending on the waffle maker. It could take a few tries to figure out the baking time.
- Remove cookies and continue greasing and baking. While baking, make the chocolate topping.
For the chocolate topping
- In a medium bowl combine the chocolate and coconut oil. Using 50% power, melt in the microwave in 30-second increments. Stir and repeat until melted, 2 minutes.8 oz semi-sweet chocolate chips, 1 tbsp coconut oil (or unsalted butter)
- Dip cooled cookies upside down in the melted chocolate. Top with colored sugars, dragees, or only chocolate.

These are the coolest little cookies I’ve ever seen and have earned a place on my annual cookie platter gifts for friends and neighbors. The chocolate flavor is deep, while the inside of the cookie is moist and cake- like the outsides are slightly crispy. I think they’re the most unique cookie I’ve ever made and Kaleb’s recipes never let me down.

We made these yesterday with the kids. They loved using the waffle iron to make cookies. I would say that I think there should be more white chocolate chips. We used about 3/4 a cup and it was still a very liquid consistency. Also finding a vintage waffle maker is harder than it seems. Luckily my grandma still had one!
