Why I Love This Chipotle Shrimp with Mango Sauce Recipe

I love shrimp. And even though I love it, for some inexplicable reason I save it for going out to eat. I assume we all have these foods that we think are just better at restaurants. Shrimp shouldn’t be difficult to cook at home, but unfortunately, they’re easily overcooked, becoming tough, rubbery, and blah… This problem can also be magnified if the shrimp aren’t high quality to begin with. But this all changed when I started roasting my own chipotle shrimp recipe infused with fresh lime and orange juice right in the oven!

The spicy, tangy, chipotle-y flavors sprinkled all over the shrimp really wake up all your taste buds. You can totally see the spice granules adorning each piece of shrimp. I mean, come on – total yum!

Adding Mango Sauce to Chipotle Shrimp

To tame those spices (and ok, I have to pause here and point out that there really isn’t that much heat in these), it’s great to pair these shrimp bites with a dip of some sort. Enter: this creamy mango sauce. While this sauce does contain a bit of heat from the added jalapeño, you’ll only be thinking about how delicious the pairing is.

I recently had several friends over and we partook on these shrimp bites and some roasted harissa carrots. Rounded out with other incredibly tasty appetizers and a few drinks, it was the perfect summer evening. So whether you’re hosting friends or whipping up a batch for your family, I hope this inspires you to roast up some shrimp in your own oven. They’re super easy and as we all know, homemade is way more flavorful than any restaurant!

Recipe Tip

To serve – Serve shrimp warm or at room temperature on a platter with the mango sauce in a small bowl for dipping. Garnish with lime wedges and cilantro for a fresh finish.

To store – Store cooked shrimp and mango sauce separately in airtight containers. This will keep up to 5 days in the fridge. Freeze cooked shrimp for up to 2 months. Mango sauce is best fresh and not ideal for freezing.

Ingredients

For the chipotle shrimp

  • 2 lb large tail-on shrimp
  • 1 tbsp olive oil
  • 2 tsp fresh lime juice
  • 1 ½ tsp ground chipotle powder
  • 1 ½ tsp kosher salt

For the mango sauce

  • 1 ripe mango
  • 1 tbsp chipotle puree
  • 1 tsp kosher salt
  • 1 jalapeño
  • 2 tsp fresh lime juice
  • 2 tsp fresh orange juice

Instructions 

For the chipotle shrimp

  • Preheat oven to 375°F.
  • Pat dry shrimp with a paper towel and drizzle with olive oil and lime juice. Spread evenly on a baking sheet.
    2 lb large tail-on shrimp, 1 tbsp olive oil, 2 tsp fresh lime juice
  • Sprinkle with chipotle powder and salt.
    1 ½ tsp ground chipotle powder, 1 ½ tsp kosher salt
  • Roast in the preheated oven until the shrimp are pink, firm and cooked through, about 8-12 minutes.

For the mango sauce

  • In a blender, combine the peeled and diced mango, chipotle purée, salt, jalapeño, lime juice, and orange juice.
    1 ripe mango, 1 tbsp chipotle puree, 1 tsp kosher salt, 1 jalapeño, 2 tsp fresh lime juice, 2 tsp fresh orange juice
  • Blend until smooth, about 20 seconds.

  • The mango sauce can be made up to two days before serving.
