Chipotle Shrimp with Mango Sauce
A little bit of heat from the chipotle powder makes these shrimp bites incredibly tasty. When paired with a mango sauce, they’re even better!

Ingredients
For the chipotle shrimp

pounds
large tail-on shrimp
1
tablespoon
olive oil
2
teaspoons
fresh lime juice
1 ½
teaspoons
ground chipotle powder
1 ½
teaspoons
kosher salt
For the mango sauce
1
ripe
mango
1
tablespoon
chipotle puree
1
teaspoon
kosher salt
1
jalapeño
2
teaspoons
fresh lime juice
2
teaspoons
fresh orange juice
Instructions
For the chipotle shrimp
Preheat oven to 375°F.
Pat dry shrimp with a paper towel and drizzle with olive oil and lime juice. Spread evenly on a baking sheet.
2 pounds large tail-on shrimp,
1 tablespoon olive oil,
2 teaspoons fresh lime juice
Sprinkle with chipotle powder and salt.
1 ½ teaspoons ground chipotle powder,
1 ½ teaspoons kosher salt
Roast in the preheated 375°F oven until the shrimp are pink, firm, and cooked through, about 8-12 minutes.
For the mango sauce
In a blender, combine the peeled and diced mango, chipotle purée, salt, jalapeño, lime juice, and orange juice.
1 ripe mango,
1 tablespoon chipotle puree,
1 teaspoon kosher salt,
1 jalapeño,
2 teaspoons fresh lime juice,
2 teaspoons fresh orange juice
Blend until smooth, about 20 seconds.
