New Year’s concludes the holiday season, although a lot of times, I try and extend it as long as possible. As a rule of thumb, I don’t over plan for New Year’s: just a simple evening with good friends and of course champagne. A great charcuterie platter is my go-to for the evening; it’s festive and so easy to put together. Everyone can nibble, sip and mingle as they please. And any great charcuterie wouldn’t be complete without some great nuts and these three are addictive. I loved testing these and eating them all (and I mean all) as nuts are my weakness. These go together in a snap and can be made a few days in advance. What could be better?

Nuts are extremely easy to customize to your taste. Try making a variation of the recipe if these aren’t your favorite flavors! I love to have bowls of these ready for guests – or just for myself! Happy New Year!

When it's the holidays and a new year rolls around, a celebratory recipe is completely necessary! These three spiced nuts are the best kind of small bite for any party! There's a sweet and spicy, Asian sesame, and rosemary and sea salt variety!

Ingredients

Asian sesame almonds

  • 1 cup raw almonds
  • 2 tbsp dark brown sugar
  • 2 tbsp tamari
  • 3 tsp toasted sesame oil
  • 1 tsp yellow curry powder
  • 2 tsp sesame seeds

Rosemary & sea salt Marcona almonds

  • 1 cup roasted Marcona almonds
  • 2 tbsp olive oil
  • 1 ½ tbsp minced fresh rosemary
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 2 tsp coarse sea salt

Sweet & spicy mixed nuts

  • 1 cup mixed raw nuts
  • 2 tbsp vegetable oil
  • 1 tbsp fresh lemon juice
  • 2 tbsp dark brown sugar
  • 3 tsp smoked paprika
  • 1 tsp cayenne pepper
  • 1 ½ tsp kosher salt

Instructions 

For the Asian sesame almonds

  • Mix together all ingredients and bake at 375°F for 20-25 minutes, stirring every 10 minutes.
    1 cup raw almonds, 2 tbsp dark brown sugar, 2 tbsp tamari, 3 tsp toasted sesame oil, 1 tsp yellow curry powder, 2 tsp sesame seeds

For the rosemary & sea salt Marcona almonds

  • Mix together all ingredients and bake at 375°F for 15 minutes.
    1 cup roasted Marcona almonds, 2 tbsp olive oil, 1 ½ tbsp minced fresh rosemary, ½ tsp garlic powder, ½ tsp onion powder, 2 tsp coarse sea salt

For the sweet & spicy mixed nuts

  • Mix together all ingredients and bake at 375°F for 20-25 minutes, stirring every 10 minutes.
    1 cup mixed raw nuts, 2 tbsp vegetable oil, 1 tbsp fresh lemon juice, 2 tbsp dark brown sugar, 3 tsp smoked paprika, 1 tsp cayenne pepper, 1 ½ tsp kosher salt
