Sweet Corn Guacamole

Ingredients

  • 4 ripe avocados
  • lime juice from 1 lime
  • 2 tbsp fresh lemon juice (about ½ a lemon)
  • 1 tsp kosher salt
  • ½ tsp freshly ground black pepper
  • 1 cup frozen sweet corn thawed
  • 1 jalapeño seeded and diced
  • ¼ cup diced red onion
  • cup chopped fresh cilantro

Instructions 

  • In a bowl, combine the avocados, lime juice, lemon juice, salt, and black pepper. Mash until the avocados are slightly mashed but still chunky.
    4 ripe avocados, lime juice from 1 lime, 2 tbsp fresh lemon juice (about ½ a lemon), 1 tsp kosher salt, ½ tsp freshly ground black pepper
  • Add the sweet corn, jalapeño, red onion, and cilantro. Mix until well combined. Taste and adjust for seasoning. Serve immediately.
    1 cup frozen sweet corn, 1 jalapeño, ¼ cup diced red onion, ⅓ cup chopped fresh cilantro
