The more I make different lemonades, the more I realize that the possibilities truly seem endless. I’m sure you all have so many ways you like to make your own lemonade. And yes, I will admit, when you make this homemade, it seems like a lot of sugar. But remember, these lemonades have no preservatives, and this is actually less sugar than many premade options, not to mention absolutely delicious! With flavors of coconut and lime, this recipe is a bit Caribbean-inspired, and you’ll love it!
Garnish with lime slices, and let yourself indulge. Cool, crisp, and refreshing… need I say more? It’s the perfect ending to a fabulous lemonade week!

Coconut Lime Lemonade
Ingredients
- 2 cups water
- 1 ⅓ cups granulated sugar
- ½ cup cream of coconut
- 1 ½ cups fresh lemon juice
- ½ cup fresh lime juice
Instructions
- Bring water and sugar to a boil over medium-high heat and stir to dissolve sugar. Once boiling and sugar is dissolved, remove from heat and add cream of coconut. Stir to dissolve and incorporate coconut. Set aside to cool, then chill.2 cups water, 1 ⅓ cups granulated sugar, ½ cup cream of coconut
- While sugar mixture is chilling, juice lemons and limes.1 ½ cups fresh lemon juice, ½ cup fresh lime juice
- To assemble lemonade, pour juices and chilled sugar syrup into a pitcher. Pour over ice-filled glasses. Garnish with lime slices and let yourself indulge.

.This looks yummy but when I tried to make it, the coconut cream solidified in the chilling process. It didn’t look appetizing and was a bit oily. Is this a natural occurance?
I think you may have used the wrong coconut product. It is important to buy “cream of coconut” and not just coconut cream, what you used will solidify and separate. Sorry for the confusion!
