Beet Hummus

If you have beets that you want a new way to enjoy, this beet hummus is for you! The color is vibrant, and the texture is creamy and super delicious! Garnished with extra olive oil and goat cheese, this dish acts as the ultimate appetizer or side.

Ingredients

  • 1 cooked beet sliced
  • 1 can chickpeas (with their liquid)
  • cup tahini
  • 1 large clove garlic
  • 2 tbsp fresh lemon juice
  • 1 tsp kosher salt
  • ¼ tsp cumin
  • ½ tsp freshly ground black pepper
  • 2 tbsp olive oil
  • 1 tbsp goat cheese (optional for vegan option)

Instructions
 

  • In a canister blender combine the beet, chickpeas, tahini, garlic, lemon juice, kosher salt, cumin, and black pepper. Blend until smooth, about 1-2 minutes.
    1 cooked beet, 1 can chickpeas (with their liquid), ⅓ cup tahini, 1 large clove garlic, 2 tbsp fresh lemon juice, 1 tsp kosher salt, ¼ tsp cumin, ½ tsp freshly ground black pepper
  • Pour the hummus into a bowl and drizzle with olive oil. If desired, sprinkle goat cheese over the top. Serve with chips or pita.
    2 tbsp olive oil, 1 tbsp goat cheese (optional for vegan option)
