In a canister blender combine the beet, chickpeas, tahini, garlic, lemon juice, kosher salt, cumin, and black pepper. Blend until smooth, about 1-2 minutes.
1 cooked beet, 1 can chickpeas (with their liquid), ⅓ cup tahini, 1 large clove garlic, 2 tbsp fresh lemon juice, 1 tsp kosher salt, ¼ tsp cumin, ½ tsp freshly ground black pepper
