When the weather is hot outside, there’s nothing better than a cool, refreshing salad to beat the heat. But sometimes lettuce salads can become a bit mundane and somewhat complicated to make. That’s where this watermelon feta salad saves the day. With chunks of watermelon and cucumber tossed with peppery arugula and a homemade dressing, the flavors are everything you could want during the summer months. And while this recipe could be the main dish of a meal, I prefer to serve it alongside a light protein as a complementary pairing.

If you’ve never had watermelon salad, the combination of ingredients may seem unique or odd, but give it a try. I promise that you will love how everything, including the textures, works so well together.

Here are some of the ingredients you will need to make this watermelon salad recipe:

  • Watermelon, with its sweet, watery taste, is the perfect main ingredient for a refreshing summer salad. While most “salads” are predominantly made with a base of greens, this recipe uses watermelon to provide the main flavor driver. Make sure to search out a ripe melon to get the most sweet watermelon flavor possible.

There are three simple steps to preparing this watermelon feta salad:

  1. Create the dressing
  2. Prepare the watermelon
  3. Assemble the salad

Step 1: Prepare the dressing. In a small bowl, add olive oil, honey, lime zest, lime juice, kosher salt, and black pepper. Whisk until combined. 

Step 2: Prepare the watermelon. Chop the watermelon into even, bite-sized squares. Cut the cucumber into bite-sized pieces. Thinly slice the shallot.

Step 3: Assemble the salad. Add the watermelon, cucumber, and shallot to a large bowl. Then, add in the arugula. Cut the feta into cubes and add to the bowl. Drizzle the dressing over the top. Add small pieces of mint. Toss the salad together until incorporated. If desired, garnish with additional fresh mint leaves and sea salt.

Pro Tips for Success

  • Use the zest from the lime before squeezing in the juice. It’s much easier to grate it off a whole lime than the halves of one. A room-temperature lime will also squeeze out more easily than a cold one.
  • Save the rind from the watermelon. It can be made into a delicious pickle, or if that’s too much, the rind can also be composted.
  • Using a block of feta works great for this recipe. It allows you to cut the cheese into cubes, giving the salad a better look and feel.
  • Rather than cutting the watermelon into cubes, it can be scooped into circles with a melon baller. This is purely a presentation choice, with either one looking beautiful. The melon baller will produce some waste, so personally, I like to cut the pieces of watermelon into cubes.

Serving and Storage Suggestions

To serve: Wait to pour the dressing onto the salad until ready to serve so that the watermelon does not begin to break down. Once everything is mixed together, serve immediately.

This recipe is a wonderful side dish or a refreshing first course during a summer dinner party. If you want to make this watermelon feta salad more of a side, I recommend serving it alongside a light protein, such as chicken, shrimp, or fish. You could even drizzle balsamic vinegar over the top to amp up the presentation and add even more flavor.

To store: Once the dressing has been added to the salad, the dish should be consumed within 1 to 2 days. The watermelon will somewhat break down as it sits in the dressing, so it’s best if eaten fresh.

Frequently Asked Questions

What type of cucumber works best?

A Hot House cucumber is best for this recipe, although any cucumber will work if you’re making it during the summer when they’re plentiful in the garden, farmer’s markets, and stores!

Can I use onions instead of shallots?

I wouldn’t recommend substituting onion for shallots because of the difference in texture. Shallots give you a nice light onion flavor with a less harsh texture. If you don’t have shallots available, I would leave them out rather than replace them with onions.

How far ahead of time can this be prepared?

The dressing can be mixed ahead of time, and the watermelon, shallot, and cucumber can be sliced ahead of time, storing both in the refrigerator. But the salad should be mixed right before serving for the best texture and flavor.

I don’t love arugula. Is there another green that can be used instead?

While I think it’s always best to try a recipe once before adjusting it, baby spinach would be an apt alternative to arugula. With its tender texture and small leaf size, it will be a pretty even swap.

Ingredients

For the dressing

  • 3 tbsp olive oil
  • 1 tsp lime zest
  • 2 tbsp fresh lime juice
  • 1 tbsp honey
  • ½ tsp kosher salt
  • ¼ tsp freshly ground black pepper

For the salad

  • 4 cups 1-inch cubed seedless watermelon
  • 2 cups ½-inch diced cucumber
  • 6 oz feta cheese cubed
  • 2 cups loosely packed baby arugula
  • ¼ cup thinly sliced shallot
  • ¼ cup chopped fresh mint leaves
  • Maldon or flaky sea salt (for serving)

Instructions
 

  • Make the dressing. In a bowl, combine the olive oil, lime zest, lime juice, honey, salt, and black pepper. Whisk and set it aside.

  • Assemble the salad. In a large bowl or on a serving platter, combine the prepared watermelon, cucumber, arugula, feta, shallot, and mint leaves. Toss to evenly combine and drizzle with the prepared dressing. Finish with flaky sea salt and more mint, and serve immediately.
