When strawberries are in season, is there any better way to enjoy them than in a simple salad dressing? This strawberry vinaigrette dressing is easy to make and combines the best flavors of the season including tarragon. When poured over a bed of fresh lettuce, it's like summer in a single bite!
In a food processor (or a high-sided container if using an immersion blender), add the strawberries, basil, mint, salt, black pepper, honey, balsamic vinegar, and lemon juice. Pulse the processor until combined, then process until fully blended. With the processor running, add oil in a slow, steady stream to emulsify the vinaigrette.
