Bake: Set the prepared tortillas on the prepared baking sheets, 6 per sheet, and brush both sides with oil or coat with cooking spray. Bake in the preheated 400°F oven, flipping halfway through, until the beef is cooked through, the tortillas are browned with crisp edges, and the cheese is melted, 25-35 minutes.
