A great sauce for meats and vegetables alike, this chimichurri sauce is full of crisp flavors and comes together quickly. Garlic scapes are the star of this sauce, providing a milder garlic taste with a hint of sweetness. Combined with other herbs and some lemon juice, this sauce is the fresh reset you need.
Roughly chop the garlic scapes and scallions. Add them to a food processor. Add in the chopped parsley and cilantro. Squeeze in the lemon juice. Add in the olive oil, salt, and red pepper flakes.
10 garlic scapes, 2 scallions, ½ cup parsley, ½ cup cilantro, ½ cup fresh lemon juice, ¾ cup olive oil, 1 tsp kosher salt, ¼ tsp red pepper flakes
