1 ½cupsbanana chips (no sugar or oil added) (I use Bare brand(affiliate link))
Instructions
Preheat the oven to 300°F.
In a large bowl, combine the old fashioned oats, flaked coconut, wheat germ, pecans, peanuts, and powdered milk. Toss to combine and set aside.
4 cups old-fashioned oats, 1 cup flaked coconut, 1 cup wheat germ, ¾ cup pecans, ¾ cup peanuts, ¼ cup powdered milk
In a microwave-safe glass container, combine the honey, oil, peanut butter, and cinnamon. Heat in 1-minute increments, stirring in between until the mixture begins to boil. This takes approximately 4-5 minutes of heating.
1 ¼ cups honey, ¼ cup neutral oil (safflower, grapeseed), ¾ cup smooth peanut butter, 2 ½ tsp ground cinnamon
When the mixture has boiled, stir and pour over the prepared dry ingredients. Stir until the dry ingredients are moistened and start to stick together.
Pour onto one large or two small baking sheets and place in the oven on the center rack. Bake 45 minutes until evenly golden brown and toasted, stirring every 15 minutes. During the first stir, sprinkle with salt.
½ tsp kosher salt
Once baked, remove from oven and break up any large pieces of granola.
Cool for 15 minutes then pour into a large bowl and add the banana chips. Toss to incorporate and store in an airtight container.
