Classic banana bread is a recipe every home baker needs. It's moist, tender, and packed with lots of banana flavor. Brown butter and sour cream keep this loaf perfectly moist, making it just right for breakfast, coffee break, or dessert.
Preheat the oven to 350°F. Grease a 9 x 5-inch loaf pan, line it with parchment, grease the parchment, and set it aside.
Brown the butter: Melt the butter in a skillet over medium heat. Once melted, continue to cook until the foaming slows and the milk solids turn brown and smell nutty, 4-6 minutes. Remove from the heat, scrape into a bowl, and let cool slightly.
8 tbsp (1 stick) unsalted butter
Mix the wet ingredients: In the bowl, combine the mashed bananas, eggs, brown sugar, vanilla extract, sour cream, and brown butter. Mix until everything is combined.
1 ½ cups mashed ripe bananas (about 3 bananas), 2 large eggs, 2 tsp vanilla extract, 3 tbsp sour cream, ¾ cup light brown sugar
Add the dry ingredients: Add the flour, salt, and baking soda, and mix until just combined.
Bake: Pour the batter into the prepared loaf pan, and smooth into an even layer. Bake for 60-70 minutes until a toothpick comes out mostly clean. Let cool 2 hours before slicing.
