Lime sugar cookies are buttery, sweet, and full of fresh citrus flavor. This easy slice-and-bake recipe bakes up tender with lightly crisp edges and a bit of sugar on top.
Mix the wet ingredients: Cream butter, sugar, and lime zest (directly into the bowl so all the oils go into the cookies) with a stand or handheld mixer until light and fluffy. Add the eggs, vanilla extract, and lime juice, and completely incorporate.

Mix in the dry ingredients: Add flour, baking soda, and salt, and mix until no dry flour remains, and all ingredients are completely incorporated.

Shape and chill: Using hands, shape dough into two logs, approximately 2-3 inches in diameter. Wrap in plastic wrap or parchment and place them in the refrigerator for 1-2 hours.
Slice: When ready to bake, preheat oven to 375°F. Unwrap and cut the chilled logs to form cookies, about ¼-inch thick. Place on an ungreased cookie sheet. If desired, sprinkle tops with sanding sugar for a sweet crunch.

Bake: Place in the preheated 375°F oven for 7-10 minutes. The cookies will become slightly browned around the edges. Once baked, cool on the pan for a few minutes, then finish cooling on a rack.
