2lbRoma tomatoescored and diced into 1-inch pieces
¾cuplight brown sugar
2tbspapple cider vinegar
1tspcumin
½tspsmoked paprika
½tspyellow curry powder
1tspkosher salt
1jalapeñoseeded and minced
1clovegarlicminced
Instructions
Add the tomatoes, brown sugar, vinegar, cumin, smoked paprika, curry powder, salt, jalapeño, and garlic to a 12-inch skillet or saucepan. Stir and bring the mixture to a boil.
Once at a boil, reduce the heat to achieve a low simmer. Simmer the mixture, stirring occasionally, until the tomatoes break down and become jam-like, and no moisture draws when a spatula is drawn through the jam, 1 to 1 ½ hours.
Remove from the heat and allow the jam to cool. Store in the refrigerator in an airtight container for up to two weeks.
