If you're looking for a delicious fall-time snack, this white chocolate, and peanut butter popcorn mix. It's a delicious combination of flavors with the seasonally-appropriate addition of candy corn, which can be included or left out. Be warned that it will be hard to stop eating!
8qtpopped popcorn (1 cup unpopped subsequently popped, which makes 32 cups)
2cupswhite chocolate chips
⅔cupcreamy peanut butter
1 ½cupspeanutsroasted and salted
1cupcandy corn
flaky sea saltas desired
Instructions
Pour the popped popcorn into a large bowl and set aside.
In a medium bowl, combine the white chocolate and the peanut butter. Heat at 50% power in the microwave stirring every 30 seconds until the mixture is smooth, 2-3 minutes total.
Pour the white chocolate peanut butter mixture over the popcorn. Add the peanuts and candy corn. Stir until the popcorn is coated in the mixture and pour on a large baking sheet. Sprinkle with flaky sea salt and allow the popcorn to cool for 15 minutes.
After cooling, break into pieces and serve.

8 quarts of popped popcorn equates to roughly 1 cup of unpopped popcorn. Once popped, the kernels add up to 8 quarts.
