A little bit of heat from the chipotle powder makes these shrimp bites incredibly tasty. When paired with a mango sauce, they’re even better!

Ingredients
For the chipotle shrimp

large tail-on shrimp

tbsp
olive oil

tsp
lime juice

ground chipotle powder
1 ½

salt
For the mango sauce
1
ripe mango
1
tbsp
chipotle purée
1
tsp
salt
1
jalapeño
2
tsp
lime juice
2
tsp
orange juice
Instructions
For the chipotle shrimp
Preheat oven to 375°F.
Pat dry shrimp with a paper towel and drizzle with olive oil and lime juice. Spread evenly on a baking sheet.
2 lb large tail-on shrimp,
1 tbsp olive oil,
2 tsp lime juice
Sprinkle with chipotle powder and salt.
1 ½ tsp ground chipotle powder,
1 ½ tsp salt
Roast in the preheated oven until the shrimp are pink, firm and cooked through, about 8-12 minutes.
For the mango sauce
In a blender, combine the peeled and diced mango, chipotle purée, salt, jalapeño, lime juice, and orange juice.
1 ripe mango,
1 tbsp chipotle purée,
1 tsp salt,
1 jalapeño,
2 tsp lime juice,
2 tsp orange juice
Blend until smooth, about 20 seconds.
