Easter is a holiday that requires some of the classics. And while this herb-heavy vinaigrette peas dish is not a traditional classic, peas as a side dish definitely are! With bright flavors and herb notes, the peas are a perfect complement to any main dish or other side dishes that are served!
Add onion, salt, and pepper and sauté until softened, 3-5 minutes.
Remove from heat and add the mustard and honey, mixing to dissolve the honey.
Add the minced tarragon and lemon juice. Whisk to combine and set aside.
Steam shelled and prepared peas over simmering water fitted with a steamer basket. Steam until peas are tender, about 4-6 minutes. Personally, I like mine slightly less done.
Remove from steamer and pour into a large bowl. Pour on prepared vinaigrette and toss peas in vinaigrette.
