Family Favorite Potato Salad

I don’t think you can have a picnic without potato salad! I mean would it even be a picnic otherwise?! While there are many recipes for potato salad this is my favorite and it’s my family’s favorite as well. There are no unusual or unique add-ins, just simple and perfect ingredients for an iconic salad that is sure to be loved by everyone.

Family Favorite Potato Salad
  1. 4 pounds red potatoes
  2. 1/2 cup diced red onion
  3. 1 cup diced celery
  4. 4 hard cooked eggs, diced
  5. 1 cup mayonnaise
  6. 1 cup Greek yogurt (or sour cream)
  7. 1 tablespoon yellow mustard
  8. 2 tablespoons vinegar
  9. 2 tablespoons pickle relish
  10. 1 teaspoon salt
  11. 1 teaspoon black pepper
  12. 1 tablespoon sugar (or more to taste)
  1. Peel potatoes and cut into equal size pieces. Place in a stockpot with cold water. Bring to a boil and simmer until the potatoes are tender and just cooked through. Drain and set aside.
  2. Mix together mayonnaise, yogurt, mustard, pickle relish, salt, pepper and sugar. Set aside.
  3. In a large bowl, pour roughly half of the prepared dressing over potatoes.
  4. Mix in the prepared onion, celery and egg.
  5. Add more dressing as needed and stir.
  6. Cover and refrigerate 3-4 hours before serving to let the flavors incorporate.
