No Bake S’mores Cake

S’mores are such a summer treat, one that I always look forward. And it was the perfect inspiration for this dessert! It’s all the flavors of s’mores in a simple, no bake, no churn ice cream dessert. Is this heaven? No, but it’s getting closer…

No Bake S'Mores Cake
Ingredients
  1. 10 whole graham crackers, crushed into crumbs
  2. 3 tablespoons melted butter
  3. 1 cup water
  4. 1/4 cup sugar
  5. 1 tablespoon + 2 teaspoons cornstarch
  6. 3 tablespoons cocoa
  7. 1 teaspoon vanilla
  8. 2 cups heavy whipping cream
  9. 1 14-ounce can sweetened condensed milk
  10. 1 jar marshmallow cream
  11. 1 teaspoon vanilla
Instructions
  1. Mix together the graham cracker crumbs and melted butter. Press mixture into an 8x8 baking dish.
  2. Prepare chocolate sauce by combining water, sugar, cornstarch and cocoa. Heat in microwave on high in one minute increments, stirring until thickened, about 4 minutes.
  3. Stir in vanilla and set aside to cool.
  4. In a separate bowl, whip the heavy cream on high until at stiff peaks.
  5. Fold in the sweetened condensed milk, marshmallow cream and vanilla until completely combined and no streaks remain.
  6. Pour ice cream mixture over graham crust. Next, pour cooled chocolate sauce over ice cream. Use a knife to swirl chocolate sauce into ice cream.
  7. Freeze 6-8 hours until hardened.
  8. Cut and serve.
