No-Bake Back-to-School Cookies

Ok, so either time really does go by quickly or I am getting older because can you believe it is back-to-school time already?! Summer goes by so quickly and that’s partly due to how busy I am during the season. It just seems to fly by! During the summer I always look forward to my sister and her family visiting. Living on the East Coast, I don’t get to see my nieces and nephew near enough so it is always such an exciting time to look forward to. I was so excited to make a video with the girls this year! Kaidence is starting kindergarten and I thought that showing her a simple cookie for lunches would be perfect. These are a great way to get kids involved in the kitchen!

No-Bake Chocolate Cookies
Ingredients
  1. 3 tablespoons butter
  2. 2 tablespoons cocoa powder
  3. 1/2 cup milk
  4. 2 cups sugar
  5. 2 ounces chopped semi-sweet chocolate
  6. 1 teaspoon vanilla
  7. 1/2 cup peanut butter
  8. 3 1/2 cups old fashioned oats (do not use instant!)
Instructions
  1. In a 3-quart kettle, stir together butter, cocoa powder, milk and sugar.
  2. Place over medium-high heat and stir until the butter melts and the mixture is smooth. Continue to cook until it begins to boil, stirring constantly.
  3. Lightly boil for one minute (no longer or it will become hard to work with).
  4. After one minute, remove from heat and add vanilla, chopped chocolate and peanut butter. Stir until the chocolate and peanut butter melt then add oats and stir to completely combine. If the mixture seem too soft to form cookies, let stand for a few minutes and the oats will soak up the extra moisture.
  5. Using a cookie scoop (or your hands), form cookies and place on parchment-lined cookie sheets.
  6. Cool in the refrigerator or at room temperature until the cookies are firm.
Notes
  1. Makes approximately 30 cookies.
